We combined the kale with apple, pomegranate seeds, and a zesty dressing, and it turned out to be an incredibly tasty concoction. It’s a great salad for a holiday gathering: Thanksgiving, Christmas, or otherwise. Did you know that pomegranates are powerful anti-oxidants with anti-cancer and immune supporting effects? METHOD: Open and squeeze pomegranates into bowl with cut up kale, letting pomegranate juice and seeds spread over kale. Add onion, pepper, thyme to food processor with S-blade and pulse a few times. If you don’t have an S-blade, just dice the onion, pepper and thyme into tiny pieces. When ready to serve, julienne the apple (cut it into matchsticks; alternatively, chop into bite-sized pieces). Combine all ingredients and dress lightly with dressing. Mix well, enjoy!
